Tasting note
The nose first reveals deep dark chocolates and tempting cedarwood aromas, followed by notes of blackberry jam, cherry and cassis. The firm, well-structured palate is characterized by robust yet sweet tannins and a wide range of aromas, ranging from black cherry and red fruits and supported by the richness of oak and vanilla notes. Now it is long and soft, with a fascinating character that will continue to develop in the coming years.
Culinary recommendation
Accompanies very good hearty beef dishes such as goulash and filet tips stroganoff.
Vinification
The “Private Collection” from Diemersdal is a classic Bordeaux assemblage. The vines grow on red, relatively heavy “Hutton” clay soils and are between 18 and 29 years old. The individual grape varieties were harvested at the optimal time and vinified separately. The alcoholic fermentation took place for 5-7 days at between 24°C and 28°C for 5-7 days with regular battonage. After malolactic fermentation, the Private Collection was aged in 40% new French barriques with a capacity of 225 liters for 20 months.
