About the wine
Since 2013, Cave de l'Hôpital has been producing its wines biodynamically and with Demeter certification. The soils are only partially cultivated and the vines are strengthened with herbal mixtures and preparations. They no longer use pesticides or herbicides at all. This Chasselas goes perfectly with the Moitié Moitié, which consists of Vacherin and Gruyère.

Tasting note
Very elegant, finely tuned nose of gooseberries and lemon mint, also sweet apricots and a slight yeast note. On the palate of great intensity, linden blossom aromas and lime; gradually also mineral notes; overall very expressive and always remaining aromatic until the long-lasting finish.
Culinary recommendation
Goes well with fish, veal, vegetable gratin and aged cheeses (e.g. Gruyère, Emmental cheese, alpine cheese).
