Tasting note
Clear, thick lemon yellow. The nose is intense and complex with fruity aromas of pear and white peach with floral notes of acacia and hawthorn flowers, followed by wax and honey scent. Dry, warm and full-bodied on the palate, with a good balance between acidity and alcohol. An elegant, complex white wine with a distinctive aftertaste.
Culinary recommendation
Goes well with fish, crustaceans, veal, mild cheeses.
Vinification
Cold maceration in steel tanks for 3 days, followed by static decantation and subsequent spontaneous fermentation in concrete tanks at 17°C temperature for 25 days. Ageing on fine yeast for 10 months and 3 months in bottle aging.
