Tasting note
Composed from grapes from old vines from two individual sites in the Grand Cru municipality of Chouilly: 84% Mont Aigu (planted in 1970) and 16% Caurés (planted in 1946). Disgorged after 68 months in bottle storage. With inviting aromas of yellow plums, juicy vineyard peaches, apples and ripe citrus fruits, framed with notes of butter brioche, nuts and cool-spicy chalk tones. Complex and vinous on the palate, yet showing good pressure, supported by a great, fresh acid structure.
Culinary recommendation
Goes well with fish and seafood, such as fried bream on young leeks with lemon zest, mackerel sashimi or oysters au gratin. But it also goes great with poultry or white meat.
