Tasting note
Grenache-dominated Elpidios starts with a light nose of dark cherry skin with a touch of herbal elements before expressing dusty red flowers. On the palate, it is medium-bodied and offers a spicy, sour plum essence before adding a potpourri spice with juicy acidity and fine-grained tannins. The wine ends with a deliciously delicious finish.
Culinary recommendation
Goes well with a lamb casserole or an Iberico Pluma with confiscated potatoes and grilled padron.
Vinification
It took almost 10 years before this dream came true, which was shaped by the reality of agriculture in Swartland, its droughts, our love for a particular wine, the Elpidios. Diversity and recognition over time, we share this dream with Swartland, where we made Grenache the main grape variety in Elpidios for the first time in 2017. This blend, based on Grenache Noir, was harvested from 11 different vineyards and in 17 batches. The 2021 vintage again contains some of the wine that was fermented and aged in a concrete tank - Grenache, Syrah and Cinsaut. In addition to the concrete tanks, the wine was also aged in old 500 L oak barrels from France and 4 100 L foudre (Pinotage). Elpidio is produced in a similar way to Grenache Noir in terms of long, gentle extraction. An average of 40% of whole bunches of grapes are used. After bottling, the wine was aged in the bottle for 18 months before it was released on the market. This vintage is also based on grapes from the Paardeberg granite soils, which come from the east with structured slate and slate soils, clay-rich soils from the north and iron-rich soils from the West.
