About the wine

The “Dalton Matatia” shows richness from the very first impression with its dark purple color and shows fragrant aromas of wild berries, blueberries and raspberries with a spicy note of tobacco and licorice. A full-bodied red wine with a beautiful structure, extensive complexity and an elegant, persistent finish. The production of this wine claims the highest quality of grapes and it is therefore only produced at the appropriate time and in limited quantities. The Cabernet Sauvignon and Merlot vines for this wine grow on various selected vineyards, which are under special supervision. During the separate fermentation, the must is poured over the skins several times a day to get an even deeper color and more mature taste. After malolactic fermentation, the wines are aged in new and old French oak barrels for 24 months. The specialist winemakers then conduct a tasting session, during which the right mix is decided. After bottling, the wine remains in the wine cellar to mature in the bottle for another year. It can be very difficult to refrain from opening it from the “Dalton Matatia” that offers passion. However, the wine reaches its peak within a few years and, under suitable conditions, can remain in the best drinking condition for over a decade. Let yourself be tempted by this hearty drop with rich dishes such as a beef brisket combined with sautéed vegetables, lamb chops in a bouillon or with a pizza margerita.
