Tasting note
A harmonious, fresh wine. Floral notes of wisteria and lime, plus white peach and gooseberry. Straightforward and precise on the palate. Lemon zest, mint and wildflower honey are revealed. The acidity gives it a lot of freshness and a long finish, which is also characterized by mineral notes of flint. The maceration of Trebbiano grapes gives the Da.Di. Bianco additional structure, which keeps it fresh.
Culinary recommendation
Goes well with aperitifs, antipasti, poultry dishes.
Vinification
Orpicchio: Whole grape pressing, fermentation and aging in used barriques. Vermentino: whole grape pressing, fermentation and maturation in clay amphorae Grechetto: 4-day carbonic acid maceration in stainless steel, fermentation and aging in amphoras Trebbiano: 48-hour maceration of the destemmed grapes, followed by fermentation and aging in used barriques. The individual wines rest on the lees until spring and are then blended.
