Tasting note
A delicate straw yellow with a very distinct bouquet that combines impressions of honey and wild apple. The palate is dry and pleasantly bitter. A well-calibrated acidity moderate, strong and yet lean. The Mionet Cuvée Sergio releases a slender but dense pearl of needlepoint bubbles.
Culinary recommendation
It is perfect in combination with light fish and vegetable dishes as well as pasta or risotto.
Vinification
Mionetto has relied on the Charmat method since 1982 to ensure the protection of the special aromas and flavors of Prosecco. The grapes are gently pressed. The first fermentation takes place at a carefully controlled temperature. The second fermentation takes place in the fermentation tank to continue to ensure the freshness and typical aromas of the grapes.
