Tasting note
First, the nose offers notes of citrus and fresh fruit. They give way to aromas of yeast that are reminiscent of toasted bread, brioche and distinctive pastry notes. Fresh and luscious on the palate, it shows a lasting elegance. The freshness and acidity of the wine are perfectly combined with all sorts of gastronomic delights.

Vinification
At the Santa Maria d'Agulladolç winery built just for this sparkling wine, the wine underwent three fermentations and a long aging process. The cool climate conditions of 2013 resulted in high acidity, which required complete malolactic fermentation, resulting in a wine of exemplary balance. Another decisive factor was the use of local yeasts in vinification, which makes the wine even more complex overall. Partial primary fermentation in the barrel and a second fermentation in the bottle (using the traditional process) round off the process. The resulting wine then ages on the lees for 30 months and develops the valuable notes of a long aging period that characterize the best and most exquisite cuvées.
