With Cru d'Origine, Flavien wants to focus on the respective characteristics of a single origin, using the grapes of origin as the only ingredient without any additives. The grapes for this single-varietal Meunier come from the small community of “Oeuilly” in the Valée de la Marne. As a “prise de mousse” for bottle fermentation, Flavien uses natural yeast made from unfermented grape must from the same vineyard. As a result, these champagnes have less pressure than usual and underline the wine quality of these exceptionally soft and delicate wines. The dosage also consists of concentrated, sweet juice from the same grapes. It does not chaptalize and does not aim for malolactic fermentation, nor is it refined or filtered.
