Tasting note
The Crozes-Hermitage is dark purple-red. On the nose, intense aromas of black berries, blackberries, elderberries, olives and sweet-spicy accents inspire. On the palate, the wine is dense and full-bodied with charming black fruit aromas, some licorice, juicy acidity, velvety tannins and a sweet-spicy finish. A Syrah that is a lot of fun to drink when drunk young but also has great aging potential.
Culinary recommendation
With roast veal, wild fowl, entrecote, lamb and grilled dishes.
Vinification
This Crozes-Hermitage is the “youngest child” of Julien Pilon and comes from more southern vineyards. The vines here are rooted on red clay soils with lots of gravel and some granite. After manual harvesting, the grapes are completely destemmed. The malolactic fermentation and the approximately 10-month aging take place in French barriques.
