In 2002, Swiss-born Jean-Claude (JC) and native South African Carolyn Martin (née Finlayson) took on the challenge of founding a winery in a remote corner of the Walker Bay wine region. Their forty-acre, rolling land on Hemel-en-Aarde Ridge had never been planted with vines, but they recognized the potential and set out to turn it into an exemplary wine farm. Located high on Hemel-en-Aarde Ridge near Hermanus, Creation vines climb the steep hills of Babylon Toren Mountain up to 350 m above sea level. During the annual growing season, temperatures rarely rise above 30°C, and the cool night temperature is 12°C below the daytime temperature all year round. The Pinot vineyards are planted on southeast, east and northeast slopes on old clay-clay soils. The grapes were harvested by hand, 20% fermented spontaneously as a whole bunch of grapes in stainless steel tanks. Aging in 10% new French oak barrels for ten months.
