About the wine
Nicolas Joly was initially an exotic, a weirdo for some, but for others he became the great idol of biodynamic viticulture. The world-renowned Joly and his daughter produce just 40,000 bottles in a good year, including the Coulée de Serrant from the monopoly of the same name, which undoubtedly belongs to the greatest white wines and has had an excellent reputation for centuries. Tasting note
Proof of God. Unparalleled sovereignty, balance and depth, charismatic positive charisma, bright, fresh undertone, meditative peace, signs of yellow fruits, fig tree, warm and exotic spices, reveal a wealth of aromas and wisdom. On the palate, a flow of energy, soft, transparent, completely balanced and yet full of vibrating power on the inside, tart but not bitter, infinite.
Culinary recommendation
Flaschenpost team tip: Goes well with puff pastry, pretzel sticks and meatballs with tomato sauce.
Vinification
Low yield. Very selective reading by hand. Very gentle pressing, no temperature control, very slow fermentation and fermentation with the vineyard's own yeasts, aging for several months in used and a very small proportion of new oak barrels. No fining, very low filtration and sulfurization.
