About the wine
The winemaker from the French winery Domaine de Fondrèche grows this wine in the Côtes du Rhône countryside. There is something left over from Easter dinner every year. Do you know that? Tasting note
Persia shines on the nose with complex aromas of blackberries, ripe cherries, wild berries, cassis and herbs such as lavender and rosemary. On the palate, it is dense and full, slightly creamy with fresh and velvety tannins and a finesse texture. A wine that has great storage potential, but is already a lot of fun.
Culinary recommendation
Wonderful with Provençal cuisine, hearty meat dishes such as lamb, game or beef, stews, ragouts and medium-aged hard cheese.
Vinification
The grapes for Persia come from the best Domaine de Fondrèche vineyards and are up to 90 years old. These are read by hand and carefully sorted. After pressing and subsequent alcoholic fermentation, further aging takes place in 225 liter barrels (barriques) and 600 liters (Demi-muids) over about a year on full yeast. Before bottling, the wine is slightly embellished but hardly filtered.
