About the wine

On the one hand, the Varvaglione 1921 winery by owner Cosimo Varvaglione consciously relies on tradition, for example with careful handwork during harvesting, and on the other hand, the cellar is modernly equipped with innovative technology to press the wines as gently as possible. The wines come from Manduria in Apulia, where the outstanding DOC for Primitivo is located. An outstanding representative of this grape is named after the owner and comes from very old vines around 60 years old. This top wine from the house is aged for a longer period of time in the cellar and, thanks to its substance and depth, it shows intensity and “sweet” melting.

Tasting note
The Cosimo Varvaglione Primitivo di Manduria DOP Old Vines 2020 is an intense and powerful red wine. On the nose, opulent aromas of ripe red fruits such as blackberries and plums develop, accompanied by fine spices, leather and a subtle note of cocoa. On the palate, it is full-bodied with a soft but present tannin structure and a harmonious balance between fruit and spice. The old vines bring depth and complexity, while the finish is long and persistent, with a subtle woody note that perfectly complements the fruit.
Culinary recommendation
This strong red wine goes well with grilled meat, lamb chops, pasta with rich sauces such as Bolognese or beef stew. Also with spicy cheeses such as pecorino or aged Parmigiano-Reggiano.
Vinification
The grapes come from old vines that grow on the region's characteristic limestone and clay soils. After manual harvesting, the wine is traditionally vinified, with prolonged maceration to ensure full extraction of aromas and colors. The wine ages in French oak barrels for a few months to develop additional complexity and soft tannins.
