Tasting note
On the nose, the wine has a complex aroma of cooked apples, crème caramel, lime, honey and mineral basalt notes. On the palate, it appears both powerful and precise, with a silky to velvety texture and lively acidity. The balance between ripe, sweet nuances and salty, volcanic minerality gives it exceptional depth and elegance.

Vinification
The grapes from the high-altitude plot are first left on the mash for 36 hours before fermenting in neutral 20-hectoliter barrels. The wine then ages for 17 months in large oak barrels, including at least six months on fine lees, with malolactic fermentation starting naturally. Unfiltered and bottled after the cycles of the waning moon, it spends another year in the bottle to fully develop its complexity.
