Tasting note
Pure Pinot Noir with grapes from the individual “Les Malachets” vineyard, aged for ten months in used 350 and 500 liter oak barrels. The bouquet shows aromas of sour cherries, plum skin and dried goji berries, plus a bit of ripe Boskoop apple, spiced with a fine herbal touch and a mineral note reminiscent of wet gravel. On the palate with an elegant structure, again showing berry fruit, with a fine acid nerve and delicately tart tones in the finale.
Culinary recommendation
A wonderful accompaniment to dishes with slightly stronger aromas, such as bresaola carpaccio with marinated chanterelles and parmesan, yellowtail mackerel tartare with umeboshi or penne with Treviso, pears and roasted pine nuts.
