Tasting note
The Cimino is deep ruby red with purple reflections. On the nose, an aromatic potpourri of ripe blackberries, cassis, black cherries and pomegranate, paired with spicy and slightly ethereal notes of eucalyptus, cinnamon, sandalwood and fresh herbs. On the palate, the wine is full-bodied and full of energy, with distinctive fruit aromas, velvety tannins, a pleasant freshness and a very long finish. A powerful and extremely harmonious red wine for the best hours of the year.

Vinification
Cimino is the nickname of Pino Persico, which he received from his children. This is also how the winery's first wine (vintage 2021) was named after its founder. The grapes are picked by hand and fermented separately by variety at low temperatures. The resulting wines then mature mostly in French barriques for 12 months. A small part is removed in stainless steel tanks. It is then blended and, after further storage, the wine is bottled and sold after 6 months of bottle aging at the earliest.
