About the wine
Amalio Aragón founded the Cillar de Silos winery together with his two sons and daughter in 1994. He had already started buying small plots of land from the neighbors over twenty years earlier because he wanted to create his own wine one day. The family is particularly proud of the underground bottle cellar, which was built at the end of the 17th century and has a constant humidity and temperatures of around 12°C. When Amalio Aragón decided to found his own winery, he named it Cillar de Silos, in homage to the monks, the so-called Cilleros, who were once responsible for organizing the pantry at Santo Domingo de Silos Abbey. The Cilleros managed the wine and food for the monks' everyday life.
