About the wine
With this outstanding Sangiovese 2017 — Chianti Classico DOCG, the term taste takes on a new meaning. The fertile and blooming Tuscan landscapes give us these grapes, from which the winemaker from the Italian winery Dievole conjures up this red wine with refinement and experience. Flaschenpöstler tip: Pair this Sangiovese with beef or pizza.
Tasting note
Intense ruby red. Intense with aromas of ripe red fruits, floral notes, particularly violets. Full of ripe tannins that highlight a harmonious and well-integrated minerality. It has a distinct taste of red forest fruits and cherries and a persistent but smooth finish. Good drinkability.
Culinary recommendation
Goes well with cheese, pasta dishes with traditional sauces and grilled meats.
Vinification
Spontaneous fermentation with local yeast in 75 hl raw concrete tanks for 14-15 days at controlled temperature (26 - 28 °C). Natural malolactic fermentation in the same tanks. The timber is aged in large French, unroasted oak barrels from Allier of 41/43 hl for a period of approx. 13 months. The aging in the bottle takes place for a period of at least three months.
