Tasting note
Peter Fischer discovered organic viticulture decades ago. Today, he is almost a master at it. Fermentation is carried out using local yeasts, and the grape varieties mainly used in Provence are present in the blend. Grenache, Cinsault and Carignan with a small portion of Cabernet Sauvignon. The wine is perfectly clean and pure, which shows that the best and healthy grapes are also used for this wine. Unlike often in Provence, the wine is completely dry, but thanks to the good extract, it appears juicy, supple and well-balanced.
