Tasting note
A restrained bouquet of licorice, graphite, spices and dark berries heralds the skin bailly. On the palate, the wine is full-bodied, complex and with a concentrated core of elegance, surrounded by youthful, firm tannins. The skin bailly ends with a long, energetic finish marked by pencil lead.
Culinary recommendation
Goes well with beef — from steaks to stroganoff to tartare or slow-cooked roast from the oven. Excellent with mature hard cheese — from Parmigiano Reggiano to Sbrinz to pecorino or older alpine cheese.
Vinification
Fermentation of the individual lots in temperature-controlled stainless steel and concrete fermentation tanks. The extraction is very gentle and without much pressure. The wine is aged for 16 months in French oak barrels, half of which are new.
