Tasting note
The quality of the flat, fairly rocky hill soils gives our Chassagne-Montrachet village of Pot Bois great length and complexity. Its tension, which is particularly noticeable in warm vintages, is due to its unique topography. It borders Premier Crus, is higher than other plots in the village and faces slightly east. Its fruits benefit from the cool morning sun and find early relief from the hot afternoon sun when it is hidden behind the crease of the famous Chassagne Montrachet hill.
Culinary recommendation
It goes well with dishes such as gougères, bouchées à la Reine, mushroom risotto or grilled lobster. It is also an ideal accompaniment to aged Comté or Beaufort in fine lamellas.
Vinification
After careful handpicking, fermentation and aging take place in oak barrels for 12 months, using 50% new wood, 30% barrels from one wine and 20% from two wines.
