Tasting note
Complex, multi-layered aromas of ripe pears, red berries and a fine spiciness. There are also tempting brioche and fine yeast notes. On the palate, a finely sparkling mousse, great freshness and a long aromatic persistence.
Culinary recommendation
This champagne is actually more wine than what is commonly understood as champagne. The connoisseur lets himself gently decant the collection and enjoy it from large red wine glasses with a sumptuous meal or a cigar on the terrace.
Vinification
The grapes for Croix Joly come from an old Pinot Meunier vineyard in Troissy. After harvesting, the grapes are aged on lees in 220l, 300l and 500l barrels before the second fermentation begins in the bottle. The dosage is very low at 0-2 g/l.
