VITICULTURAL SAVOIR-FAIRE — THE QUINTESSENCE OF BLANC DE BLANCS. Frédéric Panaïotis and his team share and enrich their know-how as an ode to the Ruinart taste. For each cuvée from Dom Ruinart, a year is selected that matches the style of Ruinart. Decision to reintroduce bottle aging with corks. The result is multi-dimensional: more depth, width, and texture. The emotional and sensory complexity is reminiscent of the Grands Vins de Bourgogne.
Culinary recommendation
Goes well with black Périgord pork fillet, Jerusalem artichoke, lovage oil and roasted chestnut shavings. Blue lobster from Brittany smoked with vines and spruce needles, daikon leaves, cream sauce with wakame seaweed and lemon zest. Leeks in various textures (grilled, fried, pureed), potato truffle sabayon.
Vinification
Aging on yeast for at least 9 years. 100% Chardonnay: 90% Côte des Blancs (Le Mesnil sur Oger, Avize, Chouilly & Cramant) and 10% from the north side of the Montagne de Reims (Sillery). Handpick. Alcoholic fermentation in temperature-controlled stainless steel tanks. Complete malolactic fermentation
