About the wine

Behind Champagne M. Marcoult is a young couple of winemakers who produce unique champagnes with enthusiasm and passion. Unlike major champagne producers, Florence and Julien Marcoult only use grapes from their own 6-hectare vineyards. Because everything should be as local as possible. For example, the oak and acacia wood for the barrels comes from a forest that is 5 km from the winery. They select the appropriate tree trunks together with their cooper. Sustainability is also a top priority for both of them. In this way, they produce all their own electricity requirements, produce their own nettle manure for the vines and a shepherd carefully cultivates their organic meadows with his sheep.

Tasting note
Dried red fruits, cranberry and strawberry jam dominate my nose delicately. I'm fruity, round and incredibly delicious. In the aftertaste, I show a hint of blood orange, which gives me additional complexity.
Culinary recommendation
My connoisseurs prefer to drink me at every aperitif. Or according to Florence, I'm perfect with salmon or beetroot tartare, or with raw ham and melon. I'm also a dream when it comes to raspberry panna cotta.
Vinification
As is well known, rosé is by far the most difficult champagne category to achieve good quality and continuity. The secret to my top quality is the quality of the red wine that is used for me. In fact, I am carefully made from a blend of white wines, including 40% reserve wines, and 10% red wine. This red wine is not simply purchased, but is vinified at the winery itself. It is a Coteaux Champenois from different plots, vintages and grapes. After fermentation, the red wine then matures in wooden barrels. This 10% top red wine gives me complexity and nuances, something that is rather rare in the rosé category. In order to preserve my freshness, I mature on the yeast for 12 months after the second fermentation. 8 grams of dosage round me off.
