About the wine
Six generations. Nine acres. It has depth. It's close. Not a grape, not a bottle that hasn't been touched and processed in-house. It is therefore not surprising that sustainable economies and biodiversity are lived here (H.E.V. Level 3). From an early age, Jean-Philipp learned to read the weather, the vines and the land in Festiny from his grandfather and father - and how to express all this in champagne with depth and balance - a slightly higher dosage. A master of cuvées and member of the Club Trésors de Champagne, which only includes outstanding, artisanal producers.

Tasting note
L'amour et la violence — as sensual as it is passionate. What a vital, stimulating scent: so many wild berries, ethereal notes and then this delicious cream in the background, it is as much a fountain of youth as it is romantic. On the palate, it then boils up for a moment: spicy, tart, mineral and quick-tempered, and then lived out the passion again in love, foams and sounds as sensual and gentle - as if in love - from: berry fruit, cream, vanilla - infused with ethereal and mineral crackling. Vinification
Fermentation in steel tanks. Malolactic fermentation. Ageing on the yeast in the bottle for 4 years. Dosage 8g/l.
