Tasting note
Jean François Clouet's champagne is characterized by notes of candied fruits, the scent of fresh Christmas stollen, saffron, roasted almonds and chocolate chips. It is distinguished by a fine perlage. Its mousse is compact, persistent and powerful on the palate. Complex in taste and long in the finish, it provides perfect enjoyment, whether with an aperitif or with culinary delights.
Culinary recommendation
For an aperitif or as an accompaniment to tagliatelle with white truffles.
Vinification
The grapes are picked by hand, carefully pressed and the must is fermented. The young wine is bottled with the addition of sugar and yeast to start the second fermentation. The subsequent maturation on the lees lasts at least 15 months. The bottles are shaken by hand in so-called pupitres in order to then remove the yeast deposit by disgorging. After addition of the dosage, the bottle receives its definitive closure and goes on sale.
