Champagne AOC/b l'Autentique Blanc de Chardonnay Extra Brut - Éric Taillet

Éric Taillet regards L'Autentique made from 100% Chardonnay grapes as a specialty, because this wine also has a special position in its program, as all its other cuvées are pure Blanc de Noir from the Pinot Meunier grapes. This is how the Chardonnay grapes are processed accordingly. The young fermented wine remains on the fine yeast for several months with regular “bâtonnages”, i.e. by stirring up the yeast, so that they give the wine its special melting point. Only then, as a complex, substance-rich young wine, is it bottled for bottle fermentation with the subsequent “champagnization”, aged on the second yeast using the classic method. The result is a strong, creamy champagne with subtle sparkling wine reminiscent of exotic fruits, with a harmoniously integrated perlage.
