Tasting note
This 1er cru champagne comes with a raspberry-colored robe. The nose is dominated by aromas of red cherries, roses, some dried fruit, dried flowers and a touch of brioche. On the palate, the wine is fruity and soft, with a fine perlage, refreshing acidity and a slightly salty and meaty finish. A champagne with a very elegant texture and a long-lasting finish.
Culinary recommendation
Goes well with dishes with salmon, raw ham, antipasti and hard cheese.
Vinification
The grapes for this cuvée come from 1er Cru vineyards in Rilly-la-Montagne. After manual harvesting, the grapes are stripped by hand and fermented with natural yeasts on the mash for 18 hours. The resulting wine matures over the winter on fine yeast in stainless steel tanks. In May of the following year, the wines are bottled, where they then undergo the second fermentation. The champagne is then aged in the bottle for at least 24 months before disgorging and being dosed very low (3g/liter). This champagne is exclusively from the 2020 vintage and no reserve wines were used.
