Tasting note
This 1er cru champagne shines in a pale golden yellow. On the nose, subtle aromas of lemon oil, lime, tangerines, apples, spring flowers and some brioche appeal. On the palate, the wine is very harmonious and smooth, with lots of citrus fruit, nuances of bread bark, some mint, a slightly chalky note, refreshing acidity and an extremely fine perlage. An extremely refreshing champagne and a great accompaniment to the meal.
Culinary recommendation
Goes well with aperitif, sushi & sashimi, crustaceans, oysters, risotto, mushroom dishes, baked vegetables, sausages, cream cheese.
Vinification
The grapes for this cuvée come from 1er cru vineyards in Ludes, Rilly-la-Montagne, Verzy and Chigny-les-Roses. The grapes are fermented with natural yeasts and the resulting wine ripens on fine lees over the winter. 30% of the wine is aged in steel tanks and 70% in large oak barrels. In May of the following year, the wines are bottled unfiltered and unembellished, where they then undergo the second fermentation. The champagne is then aged in the bottle for at least 36 months before disgorging and being dosed at a very low dose (3g/liter). This champagne is exclusively from the 2020 vintage and no reserve wines were used.
