Tasting note
This 1er cru champagne shines in a pale yellow color. The nose likes fresh aromas of lime, apple and mint, paired with spicy notes of roasted almond, waffle batter and some grain. On the palate, the wine is very harmonious and smooth, with lots of citrus fruit, nuances of brioche, some mint, a slight vegetable bitterness, a vibrating acidity and a salty-mineral finish. An extremely refreshing champagne and a great accompaniment to the meal.
Culinary recommendation
Goes well with oysters, seafood, light meat dishes and cheese.
Vinification
The grapes for this cuvée come from the 1er Cru vineyards in Ludes and Chigny-les-Roses. The grapes are fermented with natural yeasts and the resulting wine ripens on fine lees over the winter. 15% of the wine is aged in steel tanks and 85% in large oak barrels. In May of the following year, the wines are bottled, where they then undergo the second fermentation. The champagne is then aged in the bottle for at least 24 months before disgorging and being dosed at a very low dose (3g/liter). This champagne is exclusively from the 2020 vintage and no reserve wines were used.
