Tasting note
Brilliant golden yellow Complex aroma blanket. There are noble barrique notes, delicate peach scent, white flowers. Juicy, aromatic start on the palate, extremely elegant, expressive and distinctive structure. The aromas of the nose are repeated and are wonderfully balanced. The aftertaste is long, in perfect balance and has an aromatically long finish. A great Chablis Grand Cru that perfectly reflects the terroir and grape variety.
Culinary recommendation
What goes well with this wine? Grilled sea bass with ratatouille, chicken breast in light sauce, steamed salmon tranches.
Vinification
The grapes for this wine come from two plots with a total area of around 2 ha. The average age of the vines is around 50 years. The wine is vinified and aged at the foot of Chablis Grand Cru Grenouilles. After fermentation, the young wine ages in small and larger oak barrels. During slow aging on fine yeast, which can take up to 16 months, the wine develops the unmistakable, expressive character of the terroir on which it grew.
