Tasting note
The Cederberg Sustainable Rosé seduces the senses with its sophisticated salmon-pink color and its expressive nose, which gives off a rich aroma of strawberry mousse, rose petals, Turkish marmalade and freshly ripened nectarines. The palate is refreshing with a salty-spicy finish.
Culinary recommendation
This playful Shiraz-based rosé is great as a stylish summer drink, but only really comes into its own when combined with hearty “umami” flavors such as sushi, fried tuna or salmon, baked feta with tabbouleh salad, Spanish paella.
Vinification
The grapes were harvested early in the morning at 22.5° Oechsle, mashed for 8 hours at 8°C, pressed and at 10°C the must was allowed to settle for 2 days. Fermentation took place at 11°C for 24 days with selected yeast strains. The wine then aged on fine lees for a further 2 months.
