Tasting note
Initially reserved on the nose, black fruits, red berries and cherries open. Soft, juicy tannins and summer-ripe fruits make it an instantly likeable wine with the ability to develop over time. Well crafted, elegant, but without pomp and pomp. Just a really delicious wine. The Merlot dominates but the Shiraz rounds it all off and adds a touch of spice. This wine is ready for the party!
Culinary recommendation
Cederberg Merlot -Shiraz should be your wine of choice for all occasions. Be it a mushroom risotto in the middle of the week, spontaneous with friends or a barbecue evening with lamb cutlets on skewers with rosemary and black pepper. You simply can't go wrong. This wine has enough lightness and style to complement any occasion.
Vinification
Merlot and Shiraz are harvested by hand at 24-25° Oechsle and vinified separately. The grapes are cold soaked for two days and then inoculated with yeast strains During fermentation, the color and flavor are extracted through regular pumping every six hours, reaching a maximum temperature of 27°C. After malolactic fermentation in tanks is complete, the wine is aged in 225l French oak barrels for a further 12 months.
