Tasting note
A tempting Sauvignon Blanc with aromas of white pear, quince and crushed pineapple on the nose. A rich and creamy palate with a lingering taste of apricot and nectarines. A uniquely produced Sauvignon that is truly unforgettable.
Culinary recommendation
An excellent accompaniment to fresh seafood and crustaceans or to creamy pasta dishes.
Vinification
The grapes are harvested by hand early in the morning at 23.5° Oechsle. Some of the grapes are pressed as whole bundles, the rest is destemmed and crushed and transferred to 400-liter French oak barrels. Natural fermentation takes place at 13°C over the next 40 to 60 days. After fermentation is complete, the wine matures in the barrels with a monthly bâtonnage of the yeast set. There is no malolactic fermentation.
