Cava MIM Natura Brut Reserva 2019 - Vins el Cep

In Spain, cava is called a sparkling wine that is produced using bottle fermentation, i.e. using the traditional method. Even though cava can be produced in most wine-growing regions of the country, Catalonia and the Penedès region is the center. Here, in the town of Sant Sadurni, not far from Barcelona, is home to the Vins El Cep winery. Maite Esteve, who has managed the winery for many years, uses only the best grapes of old vines from her own, organically managed vineyards for the dry MIM brut nature Reserva. Following bottle fermentation, the wine ages on the yeast for more than 15 months and thus becomes a reserve. The name MIM includes the word “mimar”, i.e. caress, in the sense of: mimar la natura. A characterful aroma profile shows fine fruit, lively freshness harmonizes with elegance and class. Hard to beat in terms of enjoyment and price.
