Tasting note
Light straw yellow with greenish reflections. Extremely fine-grained perlage. Crystal clear and clean on the nose. Yellow apple, vineyard peach, wisteria and acacia flowers. Juicy, meaty and with lots of flavor on the palate. Very pleasant and long-lasting mousse. A decidedly elegant Valdobbiadene.
Culinary recommendation
Goes well with crustaceans.
Vinification
After maceration, the grapes are gently pressed. The resulting must is fermented directly for around 50 days in autoclaves - pressure-tight steel tanks. After fermentation is complete, the young sparkling wine rests on its own yeast for 120 days.
