Tasting note
Straw yellow with greenish reflections. Rich, complex bouquet with nuances of ripe fruit such as peach, quince and mango, accompanied by sweet vanilla and roasted almonds. Broad, gentle approach. Strong and rich on the palate, pleasantly full-bodied, with digestible acidity in the finale. A harmonious combination of finely spicy and fruity components.
Culinary recommendation
Goes well with fish and white meats.
Vinification
The best grapes from the estate are used for this wine. The grapes come from biodynamic farming with Demeter certification. Gentle pressing of the grapes, spontaneous fermentation in barriques (French oak from Vosges and Tronçais, around a third of which is new), followed by eleven months of aging on fine yeasts in barriques. The wine is then aged again in large wooden barrels to complete.
