About the wine
The Casa de la Ermita family winery was founded in 1999 in the heart of the Sierra del Carche Valley, a national park in the Jumilla wine region, south of Valencia. Monastrell grapes come from bush vines that are traditional in the Mediterranean region because they protect the grapes from the sun and require much less water. The Petit Verdot comes from old vines without artificial irrigation.

Tasting note
On the nose, it gives off aromas of ripe blackberries and forest soil, which develop over time into notes of mint and spices such as cloves and pepper. On the palate, it is dense, concentrated and fruity-tart. Its elegant tannins, accompanied by a touch of chocolate, make for a brilliant finale.
Culinary recommendation
It is the ideal companion for delicious delicacies such as a grilled tomahawk or vegetarian dishes with lots of umami, such as truffle pasta or black risotto with porcini mushrooms.
Vinification
Fermentation is carried out with wild yeast and takes about 12 days. It owes its spicy notes to 9 months in French oak barrels, which give it wonderful pepper and freshly ground coffee notes.
