About the wine
With experience and intuition, the winemaker from the Portuguese winery Carm masters this red wine in the graceful and blooming landscape of the Douro Valley. If we can offer something special for Christmas 2021, it's this dominant Touriga Franca 2016 — CARM Grande Reserva DOP. Flaschenpöstler culinary tip: This Touriga Franca is excellent to serve with white meat or grilled vegetables.
Tasting note
The bouquet of this wine is very fresh and intense, with notes of black forest fruits and black cherries in balance with seductive notes of licorice. The aromas are made more complex by subtle notes of vanilla from the wood. In the mouth, the wine is fabulously concentrated and has firm tannins and a smooth texture. The very long-lasting finish clearly shows the intensity of the Douro Superior wines.
Culinary recommendation
Goes well with meat, cheese and Mediterranean cuisine.
Vinification
After the grapes have arrived at the winery, we eliminate the grapes that are not in perfect condition. The grapes are then vinified under complete destemming, soft pressing and temperature shock, followed by 12 to 24 hours of cold pre-fermentation in the wine press. The must is transferred to wide and low-fermentation tanks, in which the wines ferment for about 10 days at temperatures between 24 and 26°C. The malolactic fermentation takes place naturally and is completed at the end of December. Part of the fermentation process was carried out in oak barrels.
