Vinification
Danie and Hugo Carinus have taken a certain amount of freedom to name their wine label Carinus Family Vineyards, as they are only very distantly related to each other. However, they are good friends and wine growers who supply some of the country's leading producers from vineyards in the Devon Valley, Polkadraai and Swartland. Their label has been around for several years, but in 2016, rising star Lukas van Loggerenberg tempted her to supervise production with good results. Carnius Family Vineyards is what you get when you take some of the most sought after winemakers across South Africa and combine them with the winemaking expertise of one of South Africa's most sought after winemakers. A perfect combination of wine and amazing people. The grapes for this award-winning Chenin Blanc fermented spontaneously in so-called concrete eggs. Spontaneous fermentation means that fermentation was initiated without the addition of commercial yeasts. Only wild yeast, which is present in the natural environment and on the fruit, initiated the fermentation process. 25% of the wine was aged in wood.
