Vinification
Selective manual harvesting in boxes, very gentle destemming to leave the berries completely intact, maceration and fermentation in stainless steel tanks at controlled temperatures for about 20 days with regular immersion of the pomace hat, circulate twice a day with separation of the seeds, repeated delestage, gentle pressing. After malolactic fermentation, maturation takes place in cement tanks for at least 6/8 months and then in the bottle for a period of at least 6 months.
