About the wine
The winemaker from the Italian winery Monteti is absolutely proficient in his craft. Style and finesse are the characteristics of this red wine, which originated in the fertile and flourishing Tuscan countryside. We have a special, dominant Cabernet Sauvignon from 2011 for you, which is a source of enthusiasm among many wine connoisseurs. Flaschenpöstler culinary tip: This Cabernet Sauvignon is ideal to serve with red meat or ribeye steak.
Tasting note
The 2018 Caburnio is composed of 55% Cabernet Sauvignon, 25% Alicante Bouschet and 20% Merlot. A multi-faceted, delicate mineral-looking bouquet with aromas of dark berries, grilled red peppers and Mediterranean herbs such as rosemary and sage. Complex on the palate, deep with present tannins and good pressure. A well-balanced acidity also gives the wine backbone and freshness.
Culinary recommendation
Goes well with pasta dishes, pizza, sausages and grilled meat, such as lamb racks with garlic and rosemary, or with stews such as Italian bean stew with wild boar sausages. Even with recent hard cheeses.
Vinification
Vinification information: The grapes are vinified separately. After temperature-controlled fermentation, which takes 6-8 days, the young wine remains in contact with the skins for a further 18-20 days. 50% of the wine is then moved to steel tanks and 50% to new and partly to used barriques, where it is then aged for one year. After assembly and bottling, the Caburnio is left in the bottle for a further 12 months.
