Tasting note
This wine comes from deep, red soils of ancient origin and clearly expresses the terroir of the estate. It is complex, with aromas of blackcurrant, spices and ripe plums, complemented by fine notes of soft leather and oak. With excellent maturation potential, but at the same time very accessible even at a young age.
Culinary recommendation
Preferably with tenderloin, rib-eye or lamb grilled over charcoal.
Vinification
The grapes from various plots were picked and selected by hand before being brought to stainless steel tanks for clarification. A combination of stainless steel and wooden containers was used for fermentation. Different yeasts were used to specifically shape both the aroma profile and the structure. During fermentation, various over-pumping techniques were used, including open and closed over-pumping processes at different intervals. After fermentation, the cabernet remained on the mash for three weeks before being aged for 12 months in 225 and 300-liter barrels (first, second and third use).
