About the wine
Caves Châtenay was founded in 1796 by Samuel Châtenay. In the late 19th and early 20th century, one of his descendants broke new ground in cellar work, particularly in terms of hygiene, which had an effect on a significant increase in the quality of the wines. Caves Châtenay continues to pursue this philosophy with great success today, which has led to various awards and medals. The vineyards consist of limestone and sandy soils and are located at an altitude of between 430 and 550 m above sea level.

Tasting note
Fine, airy foam formation, very small sparkling bubbles, bright golden sheen, balanced structure, with a lasting finish.
Culinary recommendation
Perfect as an aperitif or with canapés, oysters, sushi or even mild goat cheese. Also ideal as an accompaniment to light appetizers and festive occasions.
Vinification
Produced after traditional bottle fermentation (“Méthode traditionnelle”). The base wines are carefully vinified and then fermented for a second time in the bottle. After maturing on the yeast for several months, it is disgorged and provided with a fine shipping dosage that underlines the brut character.
