About the wine

Frédéric - Fred - Cossard founded his winery here in 1996, in Saint-Romain in the Côte-de-Beaune, not in the center, not necessarily known for large terroirs, and all the more impressive is what he makes, what bright Burgundy he brings into the bottle, and that requires neither sulphurization nor fining of the wines. What counts here is clean pressing, little alcohol, low pH values and patience. And unshakable confidence, because the wines go through various stages in the long unaffected fermentation, including those in which they are unappealably oxidative brown, until they naturally clear themselves, take on a healthy color and shine and show their origin, as only a few Burgundians do. And so many look out to Saint-Romain and up to Frédéric Cossard - a star among natural wine growers!

Tasting note
The black sheep of the family - that everyone envies. It is real, beautiful in its own way, present, calm, it cannot be absorbed, not fragile, but calm and dense the rather dark red fruit, cherry, even raspberry, a bit worn out, not so clear, a little different, wild notes. Once again so authentic on the palate, present in an emotional way, the juicy red fruit, but also a little rough, it doesn't stick, it doesn't slime, it shows itself as it is, ethereal, tart, slightly rough tannins, and yet completely unpretentious, genuine, comprehensible, and it will not only survive its docile brothers for a long time, but will also outshine them. A Pinot that doesn't make a noble impression. Less etiquette, more terroir. Very likeable, great with charcuterie.

Vinification
Selective manual reading Maceration up to 1 month, whole grape fermentation with vineyard yeast in open vats, maturation on yeast in oak barrels (10% new ones). Unrefined, unfiltered, unsulphurated.
