Tasting note
The wine has a bright, intense ruby red color. On the nose, it develops complex aromas of blackberry, blueberry and black currant, accompanied by floral notes such as peony and violet. On the palate, it features silky, high-quality tannins, which are accompanied by spicy nuances. The wine is full-bodied, balanced and fresh, making it a prime example of the balance between aromas and structure. Its aging potential is remarkable.
Culinary recommendation
It goes particularly well with fried or braised game such as venison or venison fillet, but it also shows its elegance with rack of lamb or a classic coq au vin. Ripened hard cheeses such as Comté or creamy Brie de Meaux complement its fine tannins and complex aromas perfectly. Mushroom dishes, particularly with truffles, also underline the complex structure of this extraordinary Grand Cru.
Vinification
The grapes are harvested by hand in openwork boxes and carefully sorted. Depending on the vintage, 20 to 50% of the grapes are fermented as whole grapes. Fermentation and maceration take 2 to 3 weeks in small open vats using traditional methods such as feeding in the pomacehat and pumping over. The yeasts used are of indigenous origin. The wine is then aged for 16 to 20 months in French oak barrels, 30% of which are new.
