Tasting note
In the glass, the wine is bright golden with youthful green reflections. A fine, lively perlage forms an elegant mousse. On the nose, aromas of lemon, grapefruit, white peach and pear develop, accompanied by fine notes of brioche, spices and roasted almonds, which gain depth with increasing ventilation. On the palate, the Cap Classique is elegant and complex, with notes of citrus, apricot, Granny Smith apple and juicy peach. A creamy texture is supported by fresh, juicy acidity and results in a long, harmonious finish. A complex, rich yet lively Cap Classique with perfect balance.

Vinification
The grapes for this exceptional Cap Classique Blanc de Blancs come from the oldest and best plots of the Robertson winery, grown on lime-rich, calcareous soils. Five different Chardonnay clones contribute to the distinctive complexity and minerality of the base wines. The harvest was carried out by hand early in the morning, followed by gentle whole grape pressing, using only the cuvée fraction. 46% of the base wine fermented in neutral French oak barrels and large foudres, the rest in stainless steel tanks for depth and structure without dominant wood influence. The wine is assembled and bottled for the second fermentation. It then matured on the yeast for 60 months before being disgorged. The result is a Cap Classique of precision, elegance and distinct yeast complexity.
