Tasting note
An elegant, summery rosé with a clear structure. Refreshing and engaging aromas of red hibiscus flowers, wild redberry fruits, fragrant herbs and orange peel unfold. The palate is full of strong berries, a sparkling medley of wild berries, boysenberries, cranberries and strawberries, and on the middle palate the luminosity of watermelon. The wine is very dry and has only a hint of tannins on the finish, which are reminiscent of citrus fruits and tempt you to take another sip.
Culinary recommendation
Enjoy it chilled or with light sausages or graved salmon.
Vinification
The Cabernet Sauvignon and Cinsault grapes were harvested from individually selected, low-yielding trellises from north-west facing vineyards within the Stellenbosch appellation. With an altitude of 140 to 270 meters above sea level and the cooling influence of the Atlantic, the aging period can be extended, resulting in phenolic wines. The hand-picked grapes arrive at the winery in the morning. The whole grapes are put directly into the membrane press. Pressing the whole grapes preserves the fruity and floral aromas while preventing the extraction of phenols and tannins from the skins. The squeezed juice is settled and bottled before it is inoculated for fermentation. After fermentation is complete, the rosé wine is transferred to old barrels for 3 months and left on its fine yeast grounds. Before bottling, the wine is removed from the barrels, stabilized and filtered to obtain a fresh and aromatic wine in the bottle.
